Description

Authentic Mexican guacamole made by mashing a flavorful paste of onion, chili, salt, and cilantro before combining with ripe avocados for a creamy, spicy, and fresh dip. Perfectly balanced with lime juice and optionally enhanced with tomato, served best with corn chips.

Ingredients

Scale

Base

  • 2 tbsp finely chopped white onion (or red, brown, or yellow)
  • 1 tbsp finely chopped jalapeno or serrano chili (adjust to taste)
  • 1/2 tsp salt, plus more to taste
  • 1/4 cup roughly chopped coriander/cilantro leaves

Main Ingredient

  • 2 medium avocados (or 1 very large one)
  • Lime juice, to taste (about 1/4 to 1/2 lime)

Optional

  • 1 ripe tomato, peeled, deseeded, and chopped

Instructions

  1. Make the flavor paste: Place the finely chopped onion, jalapeño, salt, and half of the chopped coriander on a cutting board. Use a fork to mash these ingredients together until they form a juicy, flavorful paste. Alternatively, you can use a mortar and pestle to grind them into a paste.
  2. Combine with avocado: Scrape the mashed paste into a bowl. Add the avocado flesh and the remaining chopped coriander. Mash everything together to your desired consistency, whether chunky or smooth.
  3. Taste and adjust seasoning: Taste the guacamole and adjust salt, lime juice (for acidity), and chili (for spiciness) to your preference.
  4. Add tomato if using: If you choose to include tomato, gently fold the peeled, deseeded, and chopped tomato into the guacamole now.
  5. Serve: Serve immediately with corn chips or as a topping or side for your favorite Mexican dishes.

Notes

  • Using a fork or mortar and pestle to mash the onion, chili, coriander, and salt before adding avocado is the secret to deeply infusing flavors.
  • Mashing releases the sweet and spicy flavors of the onion and chili, creating a more balanced guacamole.
  • Adjust the spiciness by varying the amount or type of chili used.
  • For a milder version, remove the seeds from the chili before chopping.
  • Fresh lime juice is essential to preserve the bright green color and add a fresh sour note.
  • The addition of tomato is optional but adds sweetness and texture.
  • Serve guacamole fresh for best taste and texture; avoid storing for long periods as avocado oxidizes quickly.
