  • 1/2 cup dry white wine
  • 1/4 cup chicken broth
  • 1/4 teaspoon Italian seasoning
  • 1 cup heavy/whipping cream
  • 2 cups loosely packed fresh baby spinach
  • 1/2 cup freshly grated parmesan cheese


Instructions

  1. Prepare the Chicken: Cut the chicken breasts in half lengthwise to create 4 thinner pieces. Season each side with garlic powder, salt, and pepper. Dredge the chicken pieces lightly in flour, coating all sides evenly.
  2. Cook the Chicken: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Add the chicken pieces and cook for 4-5 minutes on each side until golden brown. Remove the chicken from the pan and set aside on a plate.
  3. Sauté Garlic: Return the skillet to the heat and add the remaining 1 tablespoon of butter along with the minced garlic. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Deglaze the Pan: Pour in the dry white wine, chicken broth, and sprinkle in the Italian seasoning. Allow the mixture to simmer and reduce for 3-5 minutes until it thickens noticeably.
  5. Add Cream and Spinach: Stir in the heavy cream and let the sauce bubble gently for about 2 minutes. Then add the fresh baby spinach and stir until wilted and well combined.
  6. Finish Cooking: Return the chicken pieces to the skillet, spoon some sauce over them, and cook over medium heat for an additional 4-5 minutes until chicken is cooked through and the sauce has thickened to your liking.
