Main Ingredients
- 3 cups mashed potatoes
- 1.5 cups corned beef (roughly chopped or torn)
- 1/4 cup green onions (finely diced)
- 1 egg
- 1/2 cup seasoned breadcrumbs
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp pepper
For Frying
- Neutral oil for frying (about 2 tbsp per batch)
Instructions
- Combine Ingredients: In a large bowl, mix together the mashed potatoes, corned beef, green onions, egg, seasoned breadcrumbs, salt, garlic powder, and pepper until well combined.
- Form Patties: Take a small handful of the mixture, approximately 1/4 to 1/3 cup, and shape it into flat patties. Place them on a platter and cover with plastic wrap.
- Chill Patties: Refrigerate the patties for at least one hour. This resting time helps them firm up, making them easier to cook without falling apart.
- Preheat Pan: After chilling, heat a large frying pan over medium-low heat. Add about 2 tablespoons of neutral oil to the pan.
- Cook Patties: Place the patties in the pan carefully and cook for 5 minutes on each side or until they turn golden brown. Avoid flipping them too frequently as they are delicate and can break apart.
- Repeat Cooking: Continue frying the remaining patties in batches, adding more oil if necessary.
- Serve: Once all patties are cooked, sprinkle a little extra salt if desired and serve topped with your favorite accompaniments such as poached eggs, sour cream, or sauerkraut.
Notes
- These patties are a fantastic way to repurpose leftover St. Patrick’s Day corned beef and mashed potatoes.
- You can substitute boiled potatoes mashed fresh if mashed potatoes are unavailable.
- Toppings such as a poached egg, sour cream, or sauerkraut complement these patties beautifully.
- Be gentle when flipping the patties to prevent them from breaking apart.
