- Mix ingredients: In a large bowl, combine the desiccated coconut with the condensed milk. Stir thoroughly until the mixture is fully combined into a sticky, cohesive dough.
- Shape truffles: Using about 1 heaped tablespoon of the coconut mixture at a time, roll it into balls with your hands. If the mixture becomes too sticky to handle, moisten your hands slightly with water to ease rolling.
- Freeze to firm: Place the rolled balls on the lined tray and freeze them for 30 minutes. This step firms up the truffles, making them easier to coat with chocolate.
- Melt the chocolate: Gently melt the white chocolate until smooth, using a double boiler or microwave in short bursts with stirring in between to prevent burning.
- Coat truffles: Dip each chilled coconut ball into the melted white chocolate, ensuring it is completely covered. Return each coated truffle back onto the lined tray.
- Decorate and chill: Sprinkle extra desiccated coconut on top of the chocolate-coated truffles for decoration. Place the tray in the fridge for 1 hour until the white chocolate coating has hardened.
