  3. Shape truffles: Using about 1 heaped tablespoon of the coconut mixture at a time, roll it into balls with your hands. If the mixture becomes too sticky to handle, moisten your hands slightly with water to ease rolling.
  4. Freeze to firm: Place the rolled balls on the lined tray and freeze them for 30 minutes. This step firms up the truffles, making them easier to coat with chocolate.
