Ingredients
Scale
Apple Filling:
- 4 pounds apples, peeled, cored, and sliced to ¼-inch thickness (1.8kg)
- 2 tablespoons fresh lemon juice
- ⅓ cup packed light brown sugar (73g)
- 1 tablespoon cornstarch
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- ¼ cup cold unsalted butter, cut into small cubes (56g)
Topping:
- 2 cups all-purpose flour (240g)
- ½ cup granulated sugar (100g)
- 1 tablespoon baking powder
- 1 teaspoon salt
- ¾ cup whole milk (180ml)
- ¼ cup unsalted butter, melted (56g)
Instructions
- Prepare the Apple Filling: Preheat the oven to 350°F (175°C). In a large mixing bowl, toss the sliced apples with fresh lemon juice to prevent browning. Add the brown sugar, cornstarch, cinnamon, nutmeg, and vanilla extract. Mix thoroughly until the apples are evenly coated. Transfer the mixture to a 9×13-inch baking dish and evenly dot the surface with the small cubes of cold unsalted butter.
- Make the Topping: In another large bowl, whisk together the flour, granulated sugar, baking powder, and salt. Pour in the whole milk and melted unsalted butter, stirring gently with a spatula until the mixture is moistened and forms a batter-like consistency. The topping should be slightly thick but spreadable.
- Assemble and Bake: Drop spoonfuls of the topping over the apple filling in the baking dish, scattering it so it partially covers the apples (it doesn’t need to cover them completely). Place the dish in the preheated oven and bake for 45 minutes, or until the topping turns golden brown and the apple filling bubbles visibly around the edges.
- Cool and Serve: Remove the cobbler from the oven and allow it to cool for about 10 minutes. This resting period lets the juices set slightly for a thicker, luscious filling. Serve warm, ideally topped with a scoop of vanilla ice cream. Store leftovers covered in the refrigerator for up to 5 days.
Notes
- Allow the cobbler to cool for a few minutes before serving to let the filling thicken and prevent it from being runny when spooned.
- Using fresh lemon juice helps maintain the bright color of the apples and adds a slight tang that balances the sweetness.
- Ensure the topping is scattered unevenly to provide a rustic look and a variety of textures between crispy and soft.
- Store leftovers covered tightly in the refrigerator for up to 5 days and reheat gently before serving.
