These Chili Lime Chicken Wings are a zesty and flavorful twist on a classic favorite. The marinade infuses the chicken with tangy lime, spicy jalapeno, and aromatic cilantro, creating a dish that’s perfect for any occasion.

  • 2 jalapeno peppers or 1 serrano pepper, ribs and seeds removed
  • 3 garlic cloves, peeled
  • 1/2 cup cilantro, tightly packed

  • Zest from 2 limes
  • 1/4 cup lime juice
  • 2 tablespoons Paleo-friendly fish sauce (Red Boat!)
  • 2 tablespoons coconut aminos

Chicken Wings:

  • 6 pounds chicken wings and/or drumsticks
  • 12 tablespoons melted fat of choice
  • 4 limes, cut into wedges

Instructions

  1. Blend Marinade: Combine onion, peppers, garlic, cilantro, pepper, lime zest, lime juice, fish sauce, and coconut aminos in a blender until a bright green purée forms.
  2. Marinate Chicken: Toss chicken in marinade, ensuring even coating. Refrigerate for 30 minutes to 12 hours.
  3. Prep for Cooking: Remove chicken from fridge 30 minutes before cooking. Preheat oven to 400°F or grill to medium heat.
  4. Oven Method: Roast wings on a wire rack for 30 minutes at 400°F, flipping midway, until golden brown.
  5. Grilling Method: Grease grill grate, cook wings over medium heat for about 15 minutes until crisp and golden.
  6. Serve: Garnish with lime wedges and enjoy!
