Dry Pinto Beans:
- 2 cups (1 pound) dry pinto beans
Ground Beef or Turkey:
- 1 pound ground beef or ground turkey
White Rice:
- 2 cups uncooked white rice
Onion Mixture:
- 1 yellow onion, chopped
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, chopped
- 1 to 2 tablespoons chili powder
Canned Items:
- 1 (14-ounce) can crushed or whole peeled tomatoes
- 1 jalapeño pepper, sliced
Seasonings:
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon chopped parsley
Garnish:
- 1/2 cup fresh cilantro leaves
Instructions
- Cook the beans: If using dry beans, follow stovetop or pressure cooker method to cook until soft.
- Cook the rice: Prepare rice in a pot with water, butter, and salt.
- Sauté the onions: Cook onions with olive oil, garlic, and chili powder until translucent.
- Brown the meat: Brown ground beef in the skillet.
- Combine meat and onions: Add tomatoes, jalapeño, parsley, salt, and sugar to the meat mixture.
- Add beans and simmer: Drain cooked beans and add to the meat mixture. Simmer for a few minutes.
- Serve: Stir in cilantro and serve over rice or with tortillas.
