Instructions

  1. Preheat Oven: Preheat your oven to 375°F to get it ready for baking the casserole later.
  2. Cook Pasta and Broccoli: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package directions for al dente. In the last 2 minutes of cooking, add the chopped broccoli florets. Once done, drain and rinse under cold water to stop cooking.
  3. Sauté Onions: While the pasta cooks, melt the butter in a large skillet over medium heat. Add the chopped yellow onion and cook, stirring occasionally, for 4-5 minutes until softened and translucent.

  5. Combine Ingredients: Remove the skillet from heat. Stir in the chopped cooked chicken, cooked pasta, broccoli, and half of the shredded cheddar cheese until evenly mixed.
  6. Assemble Casserole: Transfer the mixture to a 13×9-inch baking dish and spread evenly. Sprinkle the remaining cheddar cheese evenly over the top.
