Instructions
- Season the Chicken: Place one tablespoon of fajita seasoning and one tablespoon of olive oil in a large mixing bowl. Mix well, then add chicken strips. Stir and use your hands to ensure the chicken is fully coated with the seasoning.
- Prepare the Casserole Dish: Grease a 9 x 13 inch casserole dish, then place the seasoned chicken strips evenly inside.
- Season the Vegetables: In the same mixing bowl, combine the remaining one tablespoon of fajita seasoning with one tablespoon of olive oil. Add the sliced bell peppers and onion strips, and toss well to coat them evenly.
- Add Vegetables to Casserole: Spread the seasoned peppers and onions over the chicken in the casserole dish.
