Instructions

  1. Melt Butter and Sauté Vegetables: Add the butter to a large saucepan or Dutch oven and melt over medium heat. Add the diced onion, celery, carrots, and garlic. Sauté until soft and fragrant, about 4-5 minutes.
  2. Add Broth and Bring to Boil: Pour in the low-sodium chicken broth, scraping up any browned bits from the bottom of the pan with a wooden spoon. Increase heat to medium-high and bring the broth to a boil.
  3. Cook Gnocchi: Once boiling, add the potato gnocchi and cook for 4 minutes until they float and are tender.
  4. Add Dairy and Seasonings: Stir in the heavy cream, whole milk, salt, dry mustard powder, and black pepper. Mix well to combine.
  5. Simmer and Thicken: When the soup returns to a low boil, reduce heat to medium and simmer for 5-7 minutes. This allows the soup to thicken slightly and flavors to meld.
