Instructions
- Prepare the kielbasa: Halve the kielbasa lengthwise and slice into 1/2-inch pieces. Heat a large deep skillet or Dutch oven over medium heat, add 1/2 tablespoon olive oil and the kielbasa. Toss to coat and cook until browned, about 3 minutes per side. Remove and set aside.
- Sauté the vegetables: Reduce the heat to medium-low and add the remaining 1 tablespoon olive oil along with the chopped onion. Cook, stirring occasionally, until the onion softens. Add minced garlic, chopped cabbage, kosher salt, and black pepper. Toss to combine well.
- Cook the cabbage: Cover the skillet and cook the cabbage mixture, stirring every 4-5 minutes until wilted and tender, approximately 12 minutes.
- Finish and combine: Stir in the red wine vinegar and return the browned kielbasa to the pan. Stir, cover, and cook for an additional 3 minutes until the cabbage is tender and the kielbasa is heated through. Adjust seasoning with salt if needed. Serve hot.
