Instructions

  1. Prepare Cherries: Soak 400 g fresh cherries in 200 ml kirsch for at least 1 hour to infuse flavor and soften the fruit.
  2. Whip Cream: In a large bowl, whip 600 ml double cream with 2 tablespoons icing sugar until soft peaks form, set aside in the fridge to keep chilled.
  3. Melt Chocolate: Gently melt the 150 g chopped dark chocolate over a double boiler or microwave in short bursts, stirring until smooth. Let it cool slightly.
  4. Assemble Base Layer: Slice the 300 g chocolate swiss roll or sponge into thick slices. Drizzle 4-5 tablespoons kirsch over the slices to moisten them and layer them at the bottom of a large trifle bowl or individual glasses.
  5. Add Cherry Jam and Brownie: Spread 200 g cherry jam evenly over the sponge layer, then scatter 150 g brownie bites on top for added texture and richness.
