Ingredients
Scale
Chocolate and Custard
- 150 g dark chocolate, chopped
- 500 ml ready made custard
- 600 ml double cream
- 2 tbsp icing sugar
Cake and Cherries
- 300 g chocolate swiss roll or chocolate sponge
- 4-5 tbsp Kirsch
- 400 g fresh cherries soaked in 200 ml kirsch
- 100 g fresh cherries
- 200 g cherry jam or conserve
- 150 g brownie bites
- 10 g grated chocolate
Instructions
- Prepare Cherries: Soak 400 g fresh cherries in 200 ml kirsch for at least 1 hour to infuse flavor and soften the fruit.
- Whip Cream: In a large bowl, whip 600 ml double cream with 2 tablespoons icing sugar until soft peaks form, set aside in the fridge to keep chilled.
- Melt Chocolate: Gently melt the 150 g chopped dark chocolate over a double boiler or microwave in short bursts, stirring until smooth. Let it cool slightly.
- Assemble Base Layer: Slice the 300 g chocolate swiss roll or sponge into thick slices. Drizzle 4-5 tablespoons kirsch over the slices to moisten them and layer them at the bottom of a large trifle bowl or individual glasses.
- Add Cherry Jam and Brownie: Spread 200 g cherry jam evenly over the sponge layer, then scatter 150 g brownie bites on top for added texture and richness.
- Add Soaked Cherries: Drain the soaked cherries slightly and layer them evenly over the jam and brownie layer.
- Layer Custard: Pour 500 ml ready made custard over the cherry layer, spreading it smoothly to cover.
- Top With Whipped Cream: Spoon or pipe the chilled whipped cream over the custard layer to create a fluffy, creamy top.
- Decorate: Garnish the trifle with fresh cherries (100 g), the remaining soaked cherries, and sprinkle 10 g grated chocolate over the entire dessert for an elegant finish.
- Chill: Refrigerate the assembled trifle for at least 1 hour before serving to allow flavors to meld and the dessert to set perfectly.
Notes
- Kirsch is a cherry brandy and can be omitted or substituted with cherry juice for a non-alcoholic version.
- Use good-quality dark chocolate for the best flavor impact in your melted chocolate layer.
- This trifle is best served within 24 hours of assembly to maintain freshness and structure.
- You can prepare this dessert a day ahead and keep it refrigerated until ready to serve.
- For a richer whipped cream, chill your mixing bowl and beaters before whipping.
