Salmon Patties
- 1 small salmon fillet, skin removed (about 5 ounces)
- 2/3 cup almond flour
- 1 large egg
- 1/2 medium-sized onion, chopped
- 1 tablespoon chopped fresh chives
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- Non-stick cooking spray, for air fryer basket and patties
Instructions
- Prepare the salmon mixture: Cut the salmon fillet into a few pieces and add all ingredients except cooking spray to a food processor. Process on high until combined but leaving a few small pieces of salmon, onion, and chives for texture.
- Form patties: Shape the mixture into 4 patties approximately 3 inches in diameter. Refrigerate the patties for 30 minutes to firm up.
- Prepare the air fryer: Spray the air fryer basket with non-stick cooking spray to prevent sticking.
- Arrange patties and spray: Place the patties in a single layer in the air fryer basket and lightly spray the tops with cooking spray.
- Air fry: Cook the patties at 400°F for 10-12 minutes until cooked through and crispy on the outside.
