Ingredients

Units Scale

Meatball Mixture

  • 1 pound ground chicken
  • 1 egg
  • 1/2 cup breadcrumbs (panko or regular)
  • 3 tbsp grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp parsley (dried) or 2 tbsp fresh

Instructions

  1. Mix ingredients: In a large mixing bowl, combine ground chicken, egg, bread crumbs, Parmesan cheese, salt, pepper, garlic powder, onion powder, paprika, olive oil, and parsley. Mix thoroughly until all ingredients are well incorporated.
  2. Shape meatballs: Take a heaping tablespoon of the mixture and gently shape it into a ball. Place each ball on a parchment-lined sheet. This recipe yields about 24 meatballs.
  3. Preheat air fryer: Set your air fryer to 400°F (200°C) and preheat for a few minutes. Line the air fryer basket with foil or spray it with cooking spray to prevent sticking.
  4. Cook the meatballs: Place the meatballs in a single layer in the basket, making sure they are not overcrowded. Air fry for 10 minutes, flipping halfway through, until they are browned and cooked through (internal temperature of 165°F).
  5. Cooking in batches: Remove cooked batches and repeat with remaining mixture. To serve all at once, reheat all cooked meatballs in the air fryer for a couple of minutes before serving.
  6. Serve: Serve warm with marinara sauce for dipping or as a main dish with pasta or salad.

Notes

  • Store – Keep in an airtight container in the fridge for up to 3 days. Reheat in the microwave before serving.
  • Freeze – Arrange uncooked meatballs on a parchment-lined sheet and freeze. Once frozen, transfer to a ziplock bag for up to 3 months. To cook from frozen, air fry for approximately 12 minutes until thoroughly cooked.
  • Ensure meatballs are cooked to an internal temperature of 165°F for safety and optimal juiciness.
  • You can customize herbs and spices according to your taste preferences.
