Description

These 5-Ingredient Crunchy Pistachio Bars are a simple, wholesome, and delicious snack reminiscent of baklava without the pastry and excess sugar. Made with whole pistachio kernels, a touch of maple syrup, fragrant cardamom, and finished with rich dark chocolate, these bars are naturally vegan, gluten-free, and packed with flavor and texture.

  • 240g pistachio kernels
  • 1 tsp ground cardamom
  • Pinch of salt

Wet Ingredients

  • 2 tbsp maple syrup

Topping

  • 50g dark chocolate (melted)


Instructions

  1. Preheat the oven. Set your oven to 180°C (160°C fan) or 350°F to ensure it’s ready for baking the bars.
  2. Combine the ingredients. In a bowl, mix the pistachio kernels with ground cardamom, a pinch of salt, and maple syrup until every nut is evenly coated with the syrup and spices.
  3. Prepare the baking mold. Line a loaf tin or suitable moulds with baking paper to prevent sticking and transfer the pistachio mixture into it. Press down gently to level the mixture.
  4. Bake the bars. Place the mould in the oven and bake for 15-17 minutes until the mixture firms up and is lightly toasted.
  5. Cool completely. Remove the bars from the oven and let them cool fully in the mould before attempting to remove or slice them. This step is crucial to keep the bars intact.
  6. Apply the chocolate coating. Once cooled, dip the base of each bar into melted dark chocolate. Optionally, drizzle some melted chocolate on top for extra flavor and decoration.
